Raw blueberry & lemon cheesecake

Blend 1 cup raw walnuts, 1 cup of pitted dates and 1tbsp cinnamon in food processor or blender


-Soak 1 1/2 cups of raw cashews in water then drain 

-1/2 cup of full fat organic coconut milk including cream at top 

-juice from 1 large lemon

-1 vanilla bean or 2 tsp vanilla extract

-1 tsp almond extract

-1/2 cup pure maple syrup

-1-2 cups fresh blueberries

Add all ingredients to blender and enjoy!

3 celery stalks

3 garlic cloves

3 tbsp chopped parsley

3 tsbp dijion mustard

4 tbsp chopped parsley

2 tbsp sriracha

1 tbsp tamari sauce

2 shallots or small chopped onion

2 green onions chopped

Optional: 2 tbsp vegan mayo

Black pepper & himalayan salt to taste

Summertime Tacos

1 can rinsed and drained organic black beans

1 red bell pepper 


1 piece of yellow corn

1 yellow squash

1 red onion

1 zucchini

corn tortillas

1 avocado 

3 cloves of garlic

Green sauce:

full fat coconut milk

2 cloves of garlic

1 squirt of siracha 

a dash of coconut aminos 

a few leaves of cilantro

1/2 avocado

Sauteé veggies and place over corn tortillas with sliced avocado

Optional: cilantro garnish 

1 lime to drizzle over

Energy Cacao Smoothie

¼ cup raw cacao powder

3 spotty ripe bananas

½ cup frozen cherries or blueberries

1 can organic full fat *coconut milk or your choice of plant based milk. (examples: almond, cashew, hemp, oat, soy, rice.)


*Light or low fat coconut milk is actually just watered down and most water contains chemicals.  Since you don’t know where this water came from and it is sitting on the self in a can, it is best to buy full fat coconut milk and then water it down yourself with some high quality water. The water they can it with is most likely stripping the coconut milk of its nutrients.

Pink Pitaya Smoothie Bowl

1 packet of pitaya (dragonfruit) frozen

½ cup frozen pineapple

½ cup frozen mango

2-3 spotty ripe bananas

fill with kangen water 9.5 or fresh coconut water

*can use coconut milk but it won’t be as bright of a pink color.

Toppings: raw pumpkin seeds, fresh mango slices, chia seeds, coconut flakes, hemp seeds, cacao nibs and edible flowers

It took me awhile to perfect the perfect vegan pancakes but once I did, my good friend, Sarah and I would make it a ritual to have pancake parties on Sundays. We would make green smoothies, green tea, and pancakes with every topping you can think of.


2 cups organic whole wheat or gluten free flour

2 teaspoons baking powder

½ cup pure maple syrup or ½ cup coconut sugar

plant based milk to mix batter up

optional: vegan chocolate chips, frozen blueberries, or slices bananas



Hemp seeds

Chia seeds

Flax seeds

Cacao nibs

Peanut butter chocolate sauce*





Coconut Flakes

Almond Butter

Fruit jam

Peanut butter


*(mix together maple syrup, raw cacao powder, cinnamon, vanilla extract and peanut butter)

Pumpkin Spiced Muffins

1 cup whole wheat unbleached flour or gluten free flour

¾ cup pure maple syrup

1 cup coconut sugar

1 chia seed egg (mix 1 tbsp with 1 tbsp water)

1 cup gluten free oats

pinch of baking powder

pinch of cinnamon

pinch of pumpkin pie seasoning

some plant based milk to mix it all together into a batter

Bake at 350 degrees for 20-25 minutes

Golden Milk

1-2 tablespoons of turmeric powder

4 dates

1 can organic coconut milk

1 teaspoon freshly grated ginger

1 tablespoon vanilla extract
